You don’t need bread for the Potato Sandwich!

You’ll need (for 6 portions):

  • 3 large, long baking potatoes
  • 1 tbsp olive oil
  • salt and pepper
  • 3 slices of mozzarella
  • 1/4 cup red pesto
  • 3 slices of Serrano ham
  • 1/4 cup arugula
  • some balsamic vinegar
